Banana Bran Muffins
- 2½ cups flour
- ¾ cup sugar
- 1½ teaspoons baking soda
- ¼ teaspoon salt
- 2 large eggs
- 1½ cups buttermilk
- 1½ cups bran
- 1 cup mashed, ripe bananas
Directions:
- Preheat oven to 350°F. Coat two 12-cup muffin pans with non-stick spray.
- Sift flour, sugar, baking soda and salt together.
- Whisk eggs, buttermilk and bran together. Let stand for 10 minutes.
- Make a well in center of the dry ingredients and add egg mixture all at once. Stir with a wooden spoon until dry ingredients are just moistened.
- Lightly fold in mashed banana. Fill tins two-thirds full.
- Bake in prepared muffin tins for about 25 minutes, until a tester poked in the center comes out clean.
