Italian Shrimp and Chickpea Salad

- 2 cups canned chickpeas, rinsed and drained
- 1 pound medium cooked shrimp, peeled and deveined
- 2 medium tomatoes, seeded and chopped
- 8 basil leaves, chopped
- ¼ cup olive oil
- salt
- freshly ground black pepper
- 4 cups baby spinach
Directions:
- In a large bowl, toss chickpeas, shrimp, tomatoes, basil, and oil. Season with salt and pepper to taste. Serve over baby spinach.
