6 tablespoons chilled butter, cut into small pieces
1 cup shredded reduced-fat cheddar cheese
1 cup half-and-half
1/3 cup honey
2 large eggs, lightly beaten
Directions:
Preheat oven to 400°F. Spray 2 baking sheets with nonstick spray.
In a bowl, combine flour, baking powder, and salt, stirring with a whisk. Cut in butter with a pastry blender until mixture resembles coarse crumbs. Add cheese, half-and-half, honey, and eggs, stirring just until moist. Knead in bowl with lightly floured hands just until dough forms.
Divide dough into 12 even portions. Shape each into a 2½-inch circle. Place 6 circles 1 to 2 inches apart on each baking sheet. Bake in preheated oven for 20 to 25 minutes, or until dark golden brown. Cool on baking sheet 10 minutes.
