Directions:
Preheat oven to 350°F. Spray a 9-inch springform pan with cooking spray.
In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat butter and 1 cup granulated sugar with an electric mixer on medium until fluffy. Beat in eggs, 1 at a time, until well blended. Beat in lemon zest and vanilla extract. With mixer on low, beat in flour mixture just until blended. Scrape batter into prepared pan and spread evenly.
Arrange apricot and plum slices alternately on top in a circular pattern around the rim. Repeat in center. Sprinkle top with 2 tablespoons granulated sugar.
Bake in preheated oven until a toothpick inserted in center of cake comes out clean, about 1 hour 5 minutes. Let cool completely on a wire rack. Remove pan side and dust top lightly with confectioners' sugar.
