Chocolate Brownies
- ¼ cup semisweet chocolate chips
- ¼ cup butter
- 1¼ cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 teaspoons instant coffee
- ¼ cup hot water
- 1½ cups all-purpose flour
- ½ cup cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon salt
Directions:
- Preheat oven to 350°F. Spray a 9-inch square pan with nonstick spray.
- Place the chocolate chips and butter in a bowl and set bowl over a pot of simmering water, stirring occasionally until melted. Remove from heat.
- Dissolve coffee in hot water. Stir coffee mixture into chocolate mixture. Stir in sugar, eggs and vanilla.
- Sift flour, cocoa and baking powder together. Fold flour mixture into the batter.
- Pour batter into prepared pan and bake until a tester comes out clean, about 20 to 25 minutes.
- Cool for 10 minutes. Cut and serve.
