Eggplant and Mushrooms with Cheese
- 1 cup eggplant, diced
- 1 cup fresh mushrooms, diced
- 1˝ cups fresh tomatoes, chopped
- 1˝ ounces low-fat mozzarella cheese
Directions:
- In a non-stick skillet, sauté eggplant, mushrooms, and tomatoes until tender. Drain off extra juice.
- Add mozzarella cheese and let melt over top.
